How to Make Vegetable Lasagna

Whether you're a Vegetarian or Meat lover, you're going to love this recipe! Trust me when I say that this is one of the best tasting lasagna recipe's that you'll find. I've tried it and it came out absolutely delicious!

The preparation time for this recipe is approximately 20 minutes or so, but it will take around an hour to cook it, so allow yourself for at least 1.5 hours to cook this lasagna. In the end, it's well worth the time and effort, and very healthy compared to lasagna you'd buy at a store (especially the frozen stuff).

The ingredients you're going to need for this recipe are as follows:

1 16 oz. package lasagna noodles
3/4 cup chopped onions
3/4 cup chopped green bell peppers
3 cloves garlic (minced)
1 pound of freshly sliced mushrooms
2 tablespoons of vegetable oil
1 15 oz. container of part skim ricotta cheese
4 cups of shredded mozzarella cheese (low-fat is even better for health)
2 26 oz. jars of your favorite pasta sauce
1 teaspoon of dried basil
2 eggs (free range, flax fed is great for health)
1/2 a cup of grated Parmesan cheese (low-fat for health)
 
Now that you have your ingredients, let's throw down in the kitchen!
 
First off, you need to cook the noodles in a large pot of boiling water for around 10 minutes. Once they're ready you need to rinse them with cool water and then drain them.
 
The next step involves using a larger pan that you can cook the sauce and veggies in. You want to toss in the peppers, onion, garlic and mushrooms along with your oil. Once you feel they're cooked, then it's time to add your basil and sauce. You want to cook this until it starts to boil, then reduce the heat and let it simmer for around 10-15 minutes.
 
Now you want to mix your eggs, ricotta and mozzarella together. Once this is done you can then turn the oven on and let it heat to 350 degrees (F). 
 
Now choose a baking dish and take some of your sauce (a cup will do) and spread it around on the bottom of the dish.
 
Now it's time to start the layering. The best way to do this is 2 layers, giving you half of your noodles, cheese, ricotta and sauce on each layer. After you've completed your 2 layers, top it all off with the rest of your mozzeralla.
 
Time for the oven! Go ahead and bake this dish for around 40-45 minutes, uncovered. Once it's done you want to let it sit for around 10-15 minutes before you start serving it to your family. It will be extremely hot, so be careful!
